SeaSprinkles to the Rescue!
Preparing a nutritious and tasty meal in a short amount of time is no easy task. As parents we are often conflicted about whether to spend more time outdoors with our children, or to spend more time in the kitchen. So go kick around the soccer ball and use up those leftovers to prepare this healthy and hearty recipe below - your kids will thank you!
Simple Rice Salad with SeaSprinkles
Ingredients:
2 1/2 cups cooked rice (or noodles, quinoa, etc.) 1/2 cup grated carrot
3 scallions, thinly sliced 1/2 cup vegetable of your choice (cooked asparagus, green beans, peas, snow peas, edamame
or chopped tomato, julienned cabbage)
2 tablespoons toasted slivered almonds, toasted sunflower seeds, or toasted sesame seeds
1/2 bag SeaSprinkles Grab & Go
1 teaspoon honey, maple syrup or agave
4 tablespoons tamari or soy sauce
1 teaspoon grated fresh ginger and/or finely chopped garlic
2 teaspoons lemon juice, rice wine vinegar, or apple cider vinegar
1 teaspoon toasted sesame oil
Mix soy sauce, sweetener, ginger and/or garlic, lemon juice or vinegar in a small bowl.
Whisk in toasted sesame oil. Set aside.
Place cooked rice, carrots, scallions, vegetables and nuts or seeds in large bowl.
Mix well and then add salad dressing. Garnish with SeaSprinkles. |
